Black, Oolong, Pu-erh, Green, Matcha & White teas are all produced from the same plant—Camellia sinensis. How can one plant yield so many amazing types of teas? The difference is a result of how/when they were harvested & how they then went on to be processed-whether they are oxidized &/or fermented, changing the flavour profile, chemistry, properties, & colour of the finished tea. Pu-erh tea is prepared in two stages: first, the tea is steamed similarly to green tea. Second, the leaves are fermented and aged under high humidity. It is produced mainly in the Yunnan district of Southwestern China. It is moderately caffeinated.
